Low-moisture foods such as spices, grains, and seeds constitute an important part of the human diet. Increased consumer concern for food safety quality has focused on decontamination technologies required low-moisture foods. Cold plasma treatment been a promising novel technology in processing industry due to its advantages safety, efficiency, versatility, environmentally friendly nature. It shown various capabilities control This paper comprehensively reviewed application cold foods, including inactivation microorganisms, degradation mycotoxins, influences promotion seed germination. can inactivate pathogenic microorganisms surface by generating active species, ultraviolet radiation, electric fields, which helps extend shelf life while having minimal impact quality. is also effective approach detoxify mycotoxin-contaminated degrading mycotoxins. With manipulation parameters generation, target functional properties products may be obtained. In addition, germination could great significance global crisis. review suggests that more systematic studies are needed employ selected applications.
